Does anyone know where I could find a pattern for an Irish knit hat? I have looked everywhere and cannot find one.

Go to Ravelry.com. If you're not yet a member, submit a membership request -- it's free, but takes a week or so. Then go to the pattern section (tab at top of page) and type "Irish Hiking" in the search box. You will find several hat patterns and a scarf and gauntlet pattern.
You can also look at my projects (my username is "PortiaJane") to see several versions of the Irish Hiking hat and with the decreases noted in detail.
