Hi I'm knitting a scarf and I cannot figure out how to keep the edges from curling...

The pattern I'm using is

http://craftfloozy.wordpress.com/2012/03/06/project-11-lacy-zigzag-scarf/

And I've tried searching online and it mentioned having garter stitches as borders (which I do have) but the garter stitch is what actually just seems to...fold in

Will blocking the scarf after I'm finished help? The yarn is 75% acrylic and 25% merino wool worsted weight.

Or is there anything else I can do?

Very pretty scarf pattern. You do have a border edge but it's not deep enough to prevent curling or flipping. Blocking may well help this out even with the mostly acrylic yarn. Pin out the damp scarf to block and see if that helps. There are some solutions in this series from TechKnitting but they may not be so easy to apply to your scarf.
